Okay, so these potatoes are seriously my current obsession. You can ask my kids or husband, because I think they are quite sick of me cooking them every other night. I got the recipe…(well if you can even call it that) from my mom who is a fabulous cook. One of my New Year’s resolutions was to start eating more healthy and cooking a lot more. These potatoes are so simple, easy and fast + you just can’t beat that!
INGREDIENTS:
– 2 lbs red potatoes (or you can use white potatoes as well)
– olive oil (also buy the olive oil in the DARK bottles and made in California…this is usually the best kind)
– salt + pepper
– dried basil
– whole grain dijon mustard seeds (not pictured but I love to use this on them too)
HOW TO:
– preheat oven to 425 degrees
– wash + quarter your potatoes and toss them on a big baking sheet
– sprinkle salt +pepper + basil and then drizzle some olive oil over the top
– toss all together w/hands, then I use a small handful of dijon mustard seeds and toss again with my hands (add a bit sprinkle more salt + pepper so it sticks)
– back for 30-45 minutes (I take a spatula half way through and re-toss the potatoes just to make sure all sides are cooked and so they don’t stick to the pan)
BAM they’re done. You will seriously be thanking me later for how yummy + easy these are. I linked all of the items I used below. Enjoy!
